Peach Preserves

- 1 basket of fresh peaches
- 5 lb. sugar
Directions

1Peel and wash peaches.

2Cut peaches in slices and cut out seed. Put peaches in boiler and cover with water.

3Put on stove; bring to a boil.

4Boil for 10 minutes or when peaches look tender (the longer the peaches boil the tougher they get).

5Turn down on low heat and mash up the peaches while covered with water (use potato masher) until chopped well.

6Pour 5 pounds sugar in boiler and stir until sugar is dissolved.

7Bring back to a boil on high heat to make syrup for preserves.

8Be sure not to let boil over.

9Cut heat down to low to keep preserves from burning.

10Be sure and stir often.

11Be sure everything is grease free.

12When peach preserves are ready, place in pint jars and turn upside down to cool.

13Will need approximately 6 to 12 jars, depending on how many peaches are in the basket.
