  • 2- 1/2 pounds Pork Loin
  • 5 whole Peaches, Pitted And Sliced
  • 1 whole Onion, Quartered
  • 4 cloves Garlic, Smashed
  • 2 Tablespoons Apple Cider Vinegar
  • 2 cups Low Sodium Chicken Broth
  • 2 teaspoons Chili Powder
  • 1 teaspoon Pepper
  • 1 teaspoon Paprika
  • 1/2 cups BBQ Sauce
  • 1- 1/2 cup Green Cabbage Shredded
  • 1/4 cups Nonfat Plain Greek Yogurt
  • 1 teaspoon Apple Cider Vinegar
  • 1/2 teaspoons Pepper
  • 1 teaspoon Honey
  • 6 whole Rolls, Sliced

    Place pork, peaches, onion, garlic, vinegar and chicken broth in the slow cooker.

    Sprinkle chili powder, pepper and paprika on top of the pork.

    Cover and set to low for 8 hours.

    Once done, take pork out and shred it.

    With a hand blender, blend peaches, onion and juices leftover in the slow cooker.

    Place the shredded pork back in the crockpot.

    Add the BBQ sauce to the crockpot and stir.

    Turn to warm until ready to serve.

    In a medium bowl, add cabbage, yogurt, vinegar, pepper and honey.
