Peach Schnapps Ice Cream

  • 1 qt. half and half
  • 1 1/4 c. sugar
  • 1 tsp. vanilla
  • 4 eggs, lightly beaten
  • 2 c. whipping cream
  • 3 lb. fresh peaches, peeled and sliced
  • 1/2 c. cognac
  • 2/3 c. peach Schnapps

Directions

    Scald half and half. Stir in sugar until dissolved. Add vanilla and eggs. Cook in top of double boiler, stirring constantly, until mixture coats a spoon.

    Chill.

    Stir in whipping cream and place in ice cream freezer.
