  • 3/4 c. flour
  • 1 tsp. baking powder
  • 1/2 tsp. salt
  • 1 (3 1/4 oz.) dry vanilla pudding mix (not instant)
  • 3 Tbsp. margarine
  • 1 egg
  • 1/2 c. milk
  • 15 to 20 oz. can sliced peaches or pineapple chunks, drained (reserve juice)
  • 1 (8 oz.) cream cheese, softened
  • 1/2 c. sugar
  • 3 Tbsp. reserved juice
  • 1 Tbsp. sugar
  • 1/2 tsp. cinnamon

Directions

    Place sliced peaches or pineapple chunks over batter.

    Combine the cream cheese, sugar and reserved juice and beat 2 minutes. Spoon to within 1-inch of edge of batter.

    Combine the 1 tablespoon sugar and cinnamon.

    Sprinkle over cream cheese filling.
