Peachy Cornbread(Spoon Bread?)

  • 2 c. sour cream
  • 1 large egg
  • 1/2 c. butter or margarine, softened
  • 2 (8 oz.) pkg. cornbread mix
  • 1 (1 lb.) can chunk-style peaches (in heavy syrup), drained

Directions

    Grease a 2-quart casserole dish. Put sour cream in a large bowl. Beat in egg and stir in butter or margarine.

    Add cornbread mix and peaches.

    Mix lightly just until blended.

    Turn into casserole dish.

    Put casserole in preheated oven at 400° and reduce heat to 350°.

    Bake 65 to 70 minutes until golden brown and puffed. Serve hot from dish with large spoon. Eat with fork.
