- 2 c. sugar
- 1/2 c. light corn syrup
- 1/4 c. boiling water
- 2 c. dry roasted peanuts
- 1 Tbsp. margarine or butter
- 1 tsp. baking soda
Directions

1Combine first 3 ingredients in a large heavy saucepan.

2Cook over low heat, stirring constantly, until sugar dissolves.

3Cover and cook over medium heat 2 to 3 minutes to melt sugar crystals on sides of pan.

4Uncover, add peanuts and cook, stirring occasionally to hard crack stage (300°).

5Stir in butter and soda.

6Pour into a buttered 15 x 10-inch pan, spreading thinly.

7Let brittle cool and break into pieces.

8Yields 1 1/2 pounds.
