  • 2 c. sugar
  • 2 1/2 c. peanuts
  • 1 tsp. water
  • 1 c. light corn syrup
  • 1/2 tsp. soda
  • 1 tsp. vanilla

Directions

    Combine sugar and syrup in Dutch oven; cook over low heat until candy thermometer registers 300°.

    Remove from heat; stir in soda, water and vanilla.

    Spread mixture onto a warm buttered 15 x 10-inch jelly roll pan.

    Allow peanut brittle to cool; break into pieces.

    Yields about 2 pounds.
