Ingredients

  • 2 c. white sugar
  • 1 c. white corn syrup
  • 1/2 c. water
  • 1 Tbsp. margarine
  • 2 c. raw peanuts
  • 1 tsp. vanilla
  • 1/2 tsp. baking soda

Directions

    Mix the sugar, corn syrup and water in a greased 2-quart saucepan.

    (I use Pam cooking spray.)

    Stir constantly and cook the mixture to 238° on a candy thermometer or the soft ball stage. Add the margarine and the peanuts.

    Still stirring, cook the mixture to 300° or the hard crack stage.

    Remove the pan from the burner and add the vanilla and soda.

    Stir until the mixture becomes foamy.

    Spread the mixture on a greased cookie sheet.

    Let it cool, then break it into bite-size pieces.
