Peanut Brittle

  • 3 c. sugar
  • 1/2 c. water
  • 4 1/2 c. salted dry roasted peanuts
  • 1 c. light corn syrup
  • 4 Tbsp. unsalted butter (no substitutes)
  • 2 tsp. baking powder

    Coat well one 12 x 17 baking pan with Pam.

    In heavy 5-quart saucepan with lid (tight-fitting), combine sugar, syrup and water. Cover pot; bring to boil over high heat about 5 minutes.

    Stir occasionally.

    Once cooked, leave uncovered and boil an additional 1 minute.

    Reduce heat to medium and boil until temperature reaches 230°.

    Add peanuts; stir well with wooden spoon until mixture reaches 300° between 13 and 18 minutes.

    Mixture should be golden brown.

    Stir in butter until melted, then add baking soda.

    Stir until foamy.

    Pour mixture in pan; will need to spread fast.

    Allow to cool at least 1 hour, then turn out and break into pieces. Store in airtight container for several weeks.
