- 2 c. sugar
- 1 c. light corn syrup
- 1 c. water
- 2 c. peanuts
- 1 tsp. butter
- 1/4 tsp. soda
Directions

1Combine sugar, corn syrup and water in a large heavy saucepan. Cook slowly, stirring until sugar is dissolved.

2Cook to soft ball stage (238°).

3Add peanuts and salt.

4Cook to hard crack stage (300°), stirring constantly.

5Remove from heat.

6Add butter and soda; stir slightly.

7Pour evenly into a well-greased shallow baking pan or cookie sheet.

8Spread thin.

9Cool partially by lifting edges with knife; when firm, turn the entire slab of brittle.

10When cold, break into pieces.

11Store at once in an airtight container.

12Makes 2 pounds.
