Peanut Burgers

  • 1 cup roasted peanuts
  • 12 cup celery, diced
  • 12 cup carrot, diced
  • 12 cup onion, diced
  • 12 cup parsley, chopped
  • 13 cup sesame seeds
  • 1 teaspoon ground cumin
  • 1 teaspoon dried dill
  • 1 teaspoon ground coriander
  • 12 teaspoon ground fennel

Directions

    Mix the cumin, dill, coriander and fennel powders.

    With a grinder or food processor, grind the peanuts, celery, carrots, onions, parsley and seeds into fine particles (but not into a powder or puree).

    Mix in the powder mixture.

    Turn the mixture in to a bowl, and knead hard for 1 minute.

    If mixture needs more binding, add 1-2 tbsp water.

    Mixture will still be somewhat dry.

    Lightly oil a cookie sheet.

    Drop the mixture into 4 large or 6 medium mounds.

    Flatten into patties with back of a spoon.

    Bake at 350F for 15-20 minutes, or until burgers are golden and crisp to the touch.

    Serve as you would burgers.
