Peanut Candy Roll

Ingredients

  • 1 c. salted peanuts
  • 6 Tbsp. butter or margarine, softened
  • 1/3 c. light corn syrup
  • 1 tsp. maple flavor
  • 1/2 tsp. salt
  • 16 oz. (4 1/2 c.) sifted powdered sugar

Directions

    Chop nuts (1/2 cup) finely chopped and 1/2 cup coarsely chopped.

    Blend butter, corn syrup, maple flavor and salt.

    Stir in sugar all at once.

    Knead until smooth.

    Add a few drops of water if necessary.

    Knead in finely chopped nuts.

    Shape into 2 nut rolls, brush with a little corn syrup and roll in coarse nuts. Wrap and chill.
