Peanut Noodle Salad

Ingredients
- 14 cup reduced-fat peanut butter
- 2 tablespoons low sodium soy sauce
- 1 tablespoon lemon juice
- 1 14 tablespoons sesame oil
- 1 teaspoon fresh ginger, grated
- salt and pepper
- 12 lb soba noodles
- 2 green onions, sliced
- 1 medium carrot, thinly sliced
- 12 cup frozen peas
Directions

1Mix first 5 ingredients together in a large bowl until smooth.

2Salt and pepper to taste.

3Add carrot, green onions and frozen peas.

4Meanwhile, bring a large pot of water to boil with salt.

5Add noodles and cook until al dente.

6Reserve 1/2 cup of pasta water and drain pasta.

7Pour hot pasta over peanut butter mixture.

8Use 2-3 tablespoons of the reserved pasta water to loosen up the sauce.

9Let cool, cover and refrigerate.
