Peanut Soup

Ingredients

  • 2 T. butter
  • 1 stalk celery chopped
  • 1 quart chicken broth
  • 2/3 c. heavy cream
  • 1 small onion chopped
  • 2 T. flour
  • 1 c. peanut butter creamy
  • salt and pepper to taste

Directions

    Melt butter in a heavy soup pot.

    Add the onion and celery and cook until just soft. Whisk in the flour (use Wonder flour) and cook 3 minutes.

    Slowly blend in the broth.

    Bring this to a boil, reduce the heat to low and simmer for 20 minutes.

    Strain and return the broth to the pot. Slowly whisk in the peanut butter and the cream.

    Simmer for about 15 minutes longer.

    Serve warm. Serves 4-6.
