Peanut Soup

Ingredients

  • 3 1/2 c. chicken broth
  • 1 stalk celery, cut up
  • 1 medium carrot, cut up
  • 1 small onion, cut up
  • 1 c. creamy peanut butter
  • 1 (13 oz.) can evaporated milk or light cream
  • dash of sugar

Directions

    In a large saucepan, combine broth, celery, carrot and onion. Bring to boil.

    Reduce heat.

    Cover and simmer 15 minutes or until vegetables are tender.

    Strain, discarding vegetables or you may puree them in blender and add to soup stock.

    Put peanut butter in the same saucepan.

    Gradually stir the hot broth into the peanut butter.

    Mixture will be stiff at first, but will become smooth. Add evaporated milk and sugar.

    Heat through, but do not boil. Serves 6.
