  • 3 tablespoons butter
  • 2 stalks celery, grated
  • 1 onion, grated
  • 1 tablespoon flour
  • 5 cups chicken stock
  • 1 cup chunk-style peanut butter
  • 3/4 cup milk
  • 3/4 heavy cream
  • Hot pepper sauce, to taste
  • Salt and pepper, to taste
  • 1/2 cup chopped roasted peanuts

Directions

    Melt the butter in a large saucepan over low heat.

    Add the grated celery and onion and cook them until they are translucent.

    Add the flour and stir until the mixture becomes a smooth paste.

    Cook the paste for 2 to 3 minutes; then add the chicken stock, stirring until smooth.

    Raise the heat slightly, and bring the soup to a boil, and add the peanut butter, stirring to make sure that it is well mixed in.
