- 2 lb. yellow crookneck squash
- 2 oz. pimento, drained and diced
- 2 Tbsp. grated onion
- 1 can cream of chicken soup
- 2 carrots, grated
- 1 c. sour cream
- 1 (7 oz.) pkg. herb stuffing mix
- 1 stick margarine, melted
- 1 c. chopped peanuts
- salt if needed
Directions

1Slice squash and cook in small amount of water until tender; drain and mash.

2Add pimento, onion, carrot, soup and sour cream; blend together.

3Toss stuffing mix, margarine and nuts together. Turn half of stuffing mixture into 9 x 11 x 2-inch casserole dish. Pour in squash mixture evenly.

4Top with remaining crumb mixture. Bake at 375° for 30 minutes or until bubbly.
