- 2 pears peeled and cored
- 1/2 lemon juice
- 1 tbsp muscovado sugar (light)
- 2 tsp cognac (optional)
- 25 grams ground almond
- 1 tbsp cocoa powder
- 50 grams icing sugar
- 1 egg white
Directions

1Preheat oven to 160C.

2Chop pears and put them on a pan with lemon juice and sugar

3Spoon into little ramekin and add a teaspoon of liqueour each if using

4For the topping sift icing sugar and cocoa into bowl.

5Add ground almond.

6Whisk egg white in a different bowl until stiff.

7Fold into dry ingredients.

8Spoon mixture over the pears and shake ramekins to even

9Bake for 20 to 25 minutes until topping firm to touch.

10Serve cold or warm
