Pear and chocolate pudding

Ingredients

  • 2 pears peeled and cored
  • 1/2 lemon juice
  • 1 tbsp muscovado sugar (light)
  • 2 tsp cognac (optional)
  • 25 grams ground almond
  • 1 tbsp cocoa powder
  • 50 grams icing sugar
  • 1 egg white

Directions

    Preheat oven to 160C.

    Chop pears and put them on a pan with lemon juice and sugar

    Spoon into little ramekin and add a teaspoon of liqueour each if using

    For the topping sift icing sugar and cocoa into bowl.

    Add ground almond.

    Whisk egg white in a different bowl until stiff.

    Fold into dry ingredients.

    Spoon mixture over the pears and shake ramekins to even

    Bake for 20 to 25 minutes until topping firm to touch.

    Serve cold or warm
