Ingredients

  • 2 to 3 pears, grated
  • 3 eggs
  • 1 c. oil
  • 1 1/2 c. sugar
  • 1/2 tsp. grated lemon peel
  • 1 tsp. vanilla
  • 3 c. flour
  • 1 tsp. salt
  • 1/4 tsp. baking powder
  • 1 tsp. baking soda
  • 1 1/2 tsp. cinnamon
  • 2/3 c. chopped nuts

    Grate the 2 pears.

    Beat eggs until light and fluffy.

    Add oil, sugar, lemon peel, vanilla and pears.

    Mix well.

    Sift together dry ingredients and add to first mixture.

    Stir in nuts.

    Pour into 2 or 3 loaf pans and bake at 325° for 50 to 60 minutes.
