Ingredients

  • 3 c. all-purpose flour
  • 1 tsp. soda
  • 1/4 tsp. baking powder
  • 1 tsp. salt
  • 1 Tbsp. ground cinnamon
  • 1 c. chopped pecans
  • 3/4 c. vegetable oil
  • 3 eggs, slightly beaten
  • 2 c. sugar
  • 2 c. peeled and grated pears
  • 2 tsp. vanilla flavoring

Directions

    Combine flour, soda, baking powder, salt and cinnamon in large bowl.

    Make a well in center of mixture.

    Combine oil, eggs, sugar, pears, vanilla and nuts.

    Add to dry ingredients stirring until just moistened.

    Spoon mixture into two greased 8 1/2 x 4 1/2 x 3-inch loaf pans.

    Bake at 325° for 1 hour and 15 minutes or until bread tests done.

    Cool 10 minutes before removing from pans.

    May be frozen.
