  • 1kg Pears
  • 25g Ginger
  • 1 Lemon
  • 200g Sugar
  • 200ml White vine vinegar
  • Chili flakes
  • Salt
  • Thyme

Directions

    Peal pears and cut into 1cm cubes. Add the juice from the lemon. Finely chop ginger.

    Caramelize sugar in a pot and add vinegar when it is liquid and brown. Simmer at medium heat until all liquid again.

    3. Add pears, ginger, thyme, salt, and chili flakes. Bring to a boil and simmer for 45 min.
