- 1kg Pears
- 25g Ginger
- 1 Lemon
- 200g Sugar
- 200ml White vine vinegar
- Chili flakes
- Salt
- Thyme
Directions

1Peal pears and cut into 1cm cubes. Add the juice from the lemon. Finely chop ginger.

2Caramelize sugar in a pot and add vinegar when it is liquid and brown. Simmer at medium heat until all liquid again.

33. Add pears, ginger, thyme, salt, and chili flakes. Bring to a boil and simmer for 45 min.
