- 4 large eggs
- 1/2 c. sugar
- pinch of salt
- 1/3 c. all-purpose flour
- 1 c. milk
- 1/2 stick margarine, melted
- 1 tsp. vanilla extract
- 1 tsp. grated lemon peel
- 3 large pears, peeled, cored and sliced
Directions

1Preheat oven to 325°.

2Generously butter a 9-inch deep dish glass pie plate.

3Beat eggs, 1/2 cup sugar and salt in medium bowl to blend; whisk in flour.

4Add milk, margarine, vanilla and lemon peel and whisk until smooth.

5Arrange pears in bottom of the pie plate.

6Pour custard over pears.

7Bake until Clafoutis is set in center and golden on top, about 55 minutes.
