Pear Compote Made with White Wine

  • 5 Pears
  • 200 ml White wine
  • 80 grams Granulated sugar
  • 400 ml Water
  • 1 tbsp Lemon juice
  • 1 Vanilla beans

    Peel the pears and cut in half lengthwise.

    Remove the core by scooping it out with a teaspoon.

    Put the white wine, granulated sugar, and water into a pot and bring to a boil to melt the sugar and boil off the alcohol.

    Then add the pears, making sure they are covered by the liquid.

    Now add the lemon juice and vanilla bean and cover with parchment paper.

    Simmer over low heat for 40 minutes - 1 hour, ladling the liquid over the top from time to time.

    After it cools off, leave the pears in the liquid and put them into the refrigerator to chill.

    The compote is delicious paired with vanilla ice cream or fresh cream.

    I used Bartlett pears.

    Lemon slices can sometimes create a bitter flavor, so I made a change to the recipe to use lemon juice instead.
