Pear Honey

- 3 lb. firm ripe pears (5 c.)
- 1 c. undrained, crushed pineapple
- 5 c. sugar
- red and yellow food coloring (optional)
Directions

1Peel, core and slice pears.

2Put the pears through the fine blade of a food chopper or use your processor.

3Combine pears, pineapple and sugar in a large kettle and bring to boil, stirring occasionally until the sugar has all dissolved.

4Reduce heat and simmer, uncovered, about 20 minutes, or until the mixture is thickened.

5Stir frequently.

6If you like a brighter, golden color, drop in a couple drops each of red and yellow food coloring.

7Pour the honey into hot, sterilized jars and seal.

8You may let them cool and pour melted paraffin over if you wish.
