Ingredients
- 3 large pears, peeled, cored and quartered (1 1/2 lb.)
- 1 (8 oz.) can crushed pineapple, drained
- 2 Tbsp. lemon juice
- 1 Tbsp. grated lemon rind
- 4 c. sugar
Directions

1Position knife blade in food processor bowl; add pears. Process until finely chopped.

2Do not puree.

3Measure pears to equal 4 cups.

4Combine 4 cups pears, pineapple and remaining ingredients in a heavy saucepan; bring slowly to a boil.

5Cook, stirring frequently, until sugar dissolves.

6Reduce heat and simmer, stirring frequently, 40 minutes or until thick.

7Spoon mixture into hot sterilized jars, filling to 1/4-inch from top; wipe jar rims.

8Cover at once with metal lids and screw on bands. Process in boiling-water bath 5 minutes.

9Cool on a wire rack. Store in a cool, dark place.
