- 5 lb. hard pears
- 3 c. sugar
- 1 pt. vinegar
- 1 c. water
- 2 slices lemon, cut 1/4-inch thick, tied in bag
- 1 Tbsp. ginger
- 2 cinnamon sticks
- 1 Tbsp. whole cloves
Directions

1Wash, peel and cut pears into 1/4's.

2Make syrup of vinegar, sugar and water.

3Add spice bag.

4Bring to a boil and cook until pears are tender and can be pierced with toothpick.

5Remove from heat and allow to plump in syrup overnight.

6Pack in jar, leaving 1/2-inch at top.

7Bring syrup to boil and pour over pears in jars. Remove air bubbles with knife.

8Adjust lids. Process 20 minutes in boiling water bath.

9Makes 3 quarts.
