Pear Streusel Pie

  • 4 c. sliced pears
  • 1 c. water
  • 1/2 c. sugar
  • 2 Tbsp. cornstarch
  • 1/8 tsp. salt
  • 1 tsp. grated lemon rind
  • 1 Tbsp. lemon juice
  • 9 or 10-inch pie crust

Directions

    Boil pears in 1 cup water for 10 minutes.

    Drain and save liquid for sauce.

    Mix sugar, cornstarch and salt.

    Add lemon rind, juice and 1 cup cooking liquid from pears.

    Cook until thick, stirring constantly.

    Put pears in uncooked pie crust; cover with sauce.

    Sprinkle with Streusel Topping and bake in a hot 425° oven for 15 minutes.

    Reduce heat to 350° and bake for 30 minutes longer.

    Serve warm with ice cream.
