Pearl Tapioca Pudding

Ingredients

  • scant qt. of milk
  • 1/2 c. tapioca (soaked 45 minutes in water)
  • 2/3 c. sugar
  • 1/2 tsp. salt
  • 2 eggs, slightly beaten
  • 1 tsp. vanilla

Directions

    Drain water off of tapioca and put in milk.

    Add salt and cook until balls are soft.

    Put sugar in beaten eggs and add to milk. Cook until mixture thickens.

    Add vanilla.

    When cool, add a small amount of Cool Whip.
