  • 1 lb. frozen peas, boiled
  • 1 onion, diced
  • 1 green pepper, diced
  • salt and pepper to taste
  • 1/2 tsp. oregano
  • 4 eggs
  • 2 ripe tomatoes, sliced
  • cooking oil

Directions

    Place oil in a large frying pan and saute onion, green pepper, tomato and spices.

    Add peas and simmer.

    When mixture is heated through, evenly break eggs onto peas and fry sunny side up.

    Ready to eat when eggs are done.

    Nicely topped with grated cheese, if desired.
