Ingredients

  • 1 c. dry whole peas
  • 2 slices bacon
  • 1 tbsp. butter
  • 1 med. onion
  • 1 tbsp. flour
  • 1 c. lowfat sour cream
  • 1 sm. can mushrooms

    Soak peas overnight.

    Boil in same water till done.

    Don't overcook, peas should be whole, not mushy.

    (There should be about 2 c. of boiled peas).

    Strain.

    In separate pan fry bacon that has been cut in small pcs, add in minced onion, saute/fry till onion is cooked.

    Add in butter.

    Stir in flour, then blend in the lowfat sour cream and liquid from mushrooms, and cook till thickened.

    Add in mushrooms and cooked peas.

    Heat.

    Mix should be quite thick.

    If you like, it may be thinned with a little lowfat milk.

    1 package frzn green peas can be substituted for dry peas.
