- 2 strips bacon, cut in pieces
- 1/2 small onion
- 1 small piece hot pepper (no seeds)
- 1 tsp. each: sugar and sherry vinegar
- 2 1/2 lb. fresh peas, shelled
- salt to taste
Directions

1Put bacon in a pan with 1 quart of cold water; bring to a boil.

2Add remainder of ingredients, except peas.

3Cook until water is reduced by half.

4Add 1 more quart cold water, peas and salt to taste.

5Bring to boil; reduce heat and simmer, covered, for 1 1/2 to 2 hours, adding water as necessary, until tender. Makes 6 to 8 servings.
