- 1 cup butter, softened
- 1/2 cup sugar
- 2 tsp. vanilla extract
- 2 cups all-purpose flour
- 1&1/2 cups finely chopped pecans
- 3/4 cup confectioners' sugar
Directions

1Preheat the oven to 300 degrees.

2Combine the butter and sugar in a large bowl.

3Beat at medium speed until light and fluffy, scraping the bowl occasionally.

4Add the vanilla, beating until blended.

5Add the flour and pecans gradually, beating well after each addition.

6Shape into balls, using a small scoop.

7Arrange 1- inch apart on an ungreased cookie sheet.

8Bake for 18 to 20 minutes or just until the cookies begin to brown around the edges.

9Cool on the cookie sheet for 2 to 3 minutes.

10Remove to a wire rack to cool slightly.

11Sprinkle the warm cookies with the confectioners' sugar. Makes 42 cookies.
