- 2 large ripe plantains
- Vegetable oil as needed
- Salt and freshly ground black pepper

1Cut plantains in half and peel.

2Slice them crosswise on the diagonal into 1/4inch ovals.

3In a 10inch iron skillet heat oil over moderate heat until hazy.

4Fry the plantains for about 4 minutes a side, turning them once.

5They should look golden brown.

6Drain on paper towels and season well with salt and pepper.
