- 2 c. butter
- 4 1/2 c. sifted plain flour
- 1/2 tsp. salt
- 1 tsp. baking powder
- 6 eggs
- 1/2 c. milk
- 1 tsp. vanilla
- 3 Tbsp. instant coffee
- 3 Tbsp. hot water
- 4 c. chopped pecans
- 1 lb. brown sugar
Directions

1Soften butter to room temperature.

2Sift salt, flour and baking powder together.

3Separate eggs and beat yolks until creamy.

4Beat whites until stiff.

5Cream butter and brown sugar. Add yolks; mix well.

6Dissolve coffee in hot water; mix with milk and vanilla.

7Add alternately with dry ingredients, mixing well. Fold in pecans and egg whites.

8Bake in oiled and floured tube pan at 325° for 1 1/2 hours.
