Pecan Carrot Bread

Ingredients

  • 2 c. unsifted flour
  • 1 1/2 c. sugar
  • 2 tsp. baking soda
  • 2 tsp. ground cinnamon
  • 1/2 tsp. salt
  • 3 eggs
  • 1 (3 1/2 oz.) can flaked coconut
  • 3/4 c. chopped pecans
  • 1/2 c. raisins
  • 2 c. grated raw carrots
  • 1 c. peanut oil or Crisco oil
  • 2 tsp. vanilla

Directions

    Combine flour, sugar, soda, cinnamon and salt.

    Stir in coconut, pecans and raisins.

    Blend in carrots, oil, eggs and vanilla.

    Pour into oiled and floured 9 x 5-inch loaf pan.

    Let stand 20 minutes.

    Bake at 350° for 1 hour and 40 minutes or until done.

    Cool in pan 5 minutes before removing.
