  • 3 egg whites, beaten stiff
  • 1 tsp. baking powder
  • 1 tsp. vanilla
  • 1 c. sugar
  • 20 saltines (Ritz)
  • 1/2 to 1 c. pecans
  • 1/2 pt. whipped cream

Directions

    Beat egg whites until stiff; add baking powder and beat more. Fold in vanilla, sugar, crackers and pecans.

    Place in greased pie plate and bake 30 minutes at 300°.

    Let cool; cover with 1/2 pint cream, whipped.
