- 4 egg whites at room temperature
- 1 c. sugar
- 1 tsp. baking powder
- 1/4 tsp. vanilla
- 2 c. saltine crackers
- 3/4 c. chopped pecans
- 1 1/2 to 2 c. whipped topping
- 1/4 c. chopped pecans
Directions

1Whip egg whites on medium speed until soft peaks form. Continue whipping on medium speed while gradually adding sugar and baking powder.

2Continue to whip until very stiff peaks form and all sugar is dissolved.

3Add vanilla and mix thoroughly.

4Coarsely break saltines and with 3/4 cup pecans fold by hand into mixture. Pour into a greased 9-inch pie pan and bake at 300° for 30 minutes until center is almost firm.

5Do not overbake!!!

6Remove from oven and cool upside down.

7When thoroughly cooled, top with whip topping and sprinkle with 1/4 cup pecans.
