- 4 egg whites, at room temperature
- 1 c. sugar
- 1 tsp. baking powder
- 1/4 tsp. vanilla
- 2 c. saltine crackers, coarsely broken
- 3/4 c. pecans, chopped
- 1 1/2 to 2 c. whipped cream or substitute
- 1/4 c. pecans, chopped
Directions

1Whip egg whites on medium speed until soft peaks form. Continue on medium speed while gradually adding sugar and baking powder.

2Continue whipping until very stiff peaks form and all sugar is dissolved.

3Add vanilla and mix thoroughly.

4Add saltines and pecans; gently fold in by hand.

5Pour into a greased 9-inch pie pan.

6Bake at 300° for 30 minutes, until center is almost firm. Remove from oven and cool upside down.

7When cooled, top with whipping cream and pecans.
