Ingredients

  • 3 egg whites
  • 1 c. sugar
  • 1 c. pecans
  • 1/2 pt. whipping cream
  • 1/2 tsp. cream of tartar
  • 20 Ritz crackers
  • 1 tsp. vanilla
  • 5 Tbsp. pineapple preserves

Directions

    Beat egg whites with cream of tartar.

    Gradually add 1 cup sugar and heat until stiff.

    Roll crackers fine and fold into egg whites and add nuts and vanilla.

    Bake in buttered pie pan at 350° for 35 to 40 minutes.

    Cool.

    Beat whipped cream.
  7. 7
    Add preserves. Place in cooled shell.
