- 2 1/2 c. sifted flour (all-purpose)
- 6 tsp. baking powder
- 2 Tbsp. sugar
- 1 tsp. salt
- 2 beaten eggs
- 2 c. milk
- 4 Tbsp. salad oil
- 1 c. chopped pecans
Directions

1Sift dry ingredients together.

2Combine rest of ingredients and add to dry ingredients, stirring just until flour is moistened.

3Do not overbeat.

4Batter will be lumpy even without the nuts.

5Bake on hot griddle.

6To keep pancakes warm until all are baked, put them in the oven at the lowest temperature.

7To serve, arrange on a platter in an overlapping pattern and garnish with twisted orange slices.

8Makes about sixteen 4-inch pancakes.
