  • 3 eggs, lightly beaten
  • 3 level Tbsp. flour
  • 1 c. granulated sugar
  • 1 c. dark Karo corn syrup
  • 2 Tbsp. melted butter
  • 1/4 tsp. nutmeg
  • pecans (about 1 1/2 c., depending on size of pie pan)
  • 1 unbaked pie shell
  • 1 1/2 tsp. vanilla (for variation 1)
  • 1/2 c. packed brown sugar (for variation 2)
  • 1 c. light corn syrup (for variation 2)

    Beat together all ingredients except pecans. Pour into unbaked pie shell. Lay pecans on top to cover surface. Bake at 350° for 50 min. If the edges begin to brown too early, cover with strips of aluminum foil.
