Ingredients

  • 14 cup butter, divided
  • 12 cup chopped pecans
  • 14 cup chopped onion
  • 1 cup uncooked long-grain rice
  • 2 cups chicken broth
  • 12 teaspoon salt
  • 18 teaspoon dried thyme
  • 18 teaspoon pepper

Directions

    Melt 1-1/2 T butter in a large skillet over medium heat.

    Add pecans; saute' 8.minutes or until lightly browned.

    Remove pecans from skillet.

    Melt remaining 2-1/2 T butter in skillet over medium heat; add onion, and cook.

    until tender, stirring occasionally.

    Stir in rice and remaining ingredients.

    Bring mixture to a boil; cover, reduce heat and simmer 20 minutes until liquid is absorbed and rice is tender.

    Remove from heat; stir in pecans.
