- 1 c. butter
- 1 1/2 c. sugar
- 2 Tbsp. milk
- 5 eggs
- 2 c. flour and 1/2 tsp. more
- 1 tsp. salt
- 3/4 c. broken pecans, lightly toasted
- 2 tsp. lemon juice
- 1 tsp. grated lemon rind
Directions

1Cream together butter and milk; add eggs one at a time, adding milk after each egg.

2Sift together flour and salt.

3Add to creamed mixture.

4Add 1/2 cup toasted pecans to mixture.

5Pour into a greased 9-inch tube pan or loaf pan.

6Sprinkle in the remaining pecans.

7Bake at 325° for 1 hour and 25 minutes.

8Check pan doneness after 1 1/4 hours.

9Cool for 5 minutes on each.

10Remove from pan and cool.
