  • 1 c. butter
  • 1 1/2 c. sugar
  • 2 Tbsp. milk
  • 5 eggs
  • 2 c. flour and 1/2 tsp. more
  • 1 tsp. salt
  • 3/4 c. broken pecans, lightly toasted
  • 2 tsp. lemon juice
  • 1 tsp. grated lemon rind

    Cream together butter and milk; add eggs one at a time, adding milk after each egg.

    Sift together flour and salt.

    Add to creamed mixture.

    Add 1/2 cup toasted pecans to mixture.

    Pour into a greased 9-inch tube pan or loaf pan.

    Sprinkle in the remaining pecans.

    Bake at 325° for 1 hour and 25 minutes.

    Check pan doneness after 1 1/4 hours.

    Cool for 5 minutes on each.
