Ingredients
- 1/2 c. celery, chopped
- 1/2 c. onions, chopped
- 1/4 c. green peppers, chopped
- 2 c. Special K cereal (crush after measuring)
- 3/4 c. pecan meal (finely ground pecans)
- 1 c. bread or cracker crumbs
- 2 pkg. light George Washington broth
- 1/3 c. mayonnaise
- 1 c. low-fat cottage cheese
- 3 eggs, beaten
- onion salt
- 2 Tbsp. soy sauce
Directions

1Cook celery, onion and peppers in 2/3 cup water for 10 minutes.

2Mix all ingredients together in a large mixing bowl. Bake in well-oiled loaf pan at 375° until nicely browned (about 1 hour).
