Ingredients

  • 1/2 c. celery, chopped
  • 1/2 c. onions, chopped
  • 1/4 c. green peppers, chopped
  • 2 c. Special K cereal (crush after measuring)
  • 3/4 c. pecan meal (finely ground pecans)
  • 1 c. bread or cracker crumbs
  • 2 pkg. light George Washington broth
  • 1/3 c. mayonnaise
  • 1 c. low-fat cottage cheese
  • 3 eggs, beaten
  • onion salt
  • 2 Tbsp. soy sauce

Directions

    Cook celery, onion and peppers in 2/3 cup water for 10 minutes.

    Mix all ingredients together in a large mixing bowl. Bake in well-oiled loaf pan at 375° until nicely browned (about 1 hour).
