Pecan Rolls

Ingredients

  • 1 (7 oz.) jar marshmallow cream
  • 1 (1 lb.) pkg. powdered sugar
  • 1 tsp. vanilla extract
  • 1 (14 oz.) pkg. caramels
  • 3 Tbsp. water
  • 1 to 1 1/2 c. chopped pecans (1 qt.)

Directions

    Combine first three ingredients.

    Mix well with hands.

    Shape mixture into 5 (4 x 1-inch) rolls.

    Mixture will be very dry. Chill 2 or 3 hours.

    Combine caramels and water in top of a double boiler; cook until melted.

    Dip rolls in melted caramels and roll each in pecans; chill 1 hour.

    Cut into slices to serve.

    Yield: 5 rolls.
