  • 2 None eggs, lightly beaten
  • 1/2 cup maple syrup
  • 1/4 cup packed brown sugar
  • 2 tbsp butter, melted
  • 1 cup coarsely chopped pecans
  • 2 None refrigerated pie crusts
  • None None Whipped cream, ground cinnamon, to serve

    Preheat the oven to 400°F. Lightly grease two 12-cup mini muffin pans.

    Lightly roll pie crusts on a floured surface. Using a 2 3/4-inch round cookie cutter, cut 24 rounds from the pie crusts. Press into muffin cups. Prick bottoms with a fork. Freeze for 5 mins.

    Bake for 5-8 mins. Remove muffin pans from oven. Reduce oven temperature to 350°F.

    Meanwhile, for the filling, whisk eggs, maple syrup, sugar and butter in a large bowl. Stir in pecans. Spoon evenly into crusts.

    Bake for 10-15 mins until set. Cool in pan 5 mins. Remove from pan; cool completely on wire rack. Serve topped with whipped cream and dusted with a little ground cinnamon.
