Ingredients
- 2 Tbsp. olive oil
- 4 slice pancetta (Italian bacon) or Prosciutto (Italian ham)
- 2 garlic cloves, minced
- 1 (35 oz.) can Italian peeled plum tomatoes with juice
- salt to taste
- 1 shake dried red pepper flakes
- 1 lb. penne
- 1/2 c. grated Parmesan cheese
Directions

1Brown pancetta and garlic in olive oil over medium heat in a large frying pan (7 minutes).

2Add tomatoes with liquid, salt and pepper flakes and boil, breaking up tomatoes for 30 minutes or until thick, stirring frequently.

3Cook penne in large pot of boiling water until al dente.

4Drain pasta.

5Put back in pot.

6Add sauce and mix to coat.

7Add cheese; mix well.

8Serve.
