Ingredients

  • 1 8 oz. pasta, cooked & drained
  • 1 tbsp. extra virgin olive oil
  • 1 med. onion, chopped
  • 2 cloves garlic, crushed
  • 2 tbsp. butter
  • 3 tbsp. flour
  • 1 1/2 c. skim milk
  • 1 1/2 c. fat free Half & Half
  • 1 c. gr. Parmesan
  • 2 tsp. dried Ital. seasoning
  • Salt, pepper to taste
  • 1 14 oz can diced tomatoes, seasoned
  • 1 10 oz. pkg. frozen chopped spinach, thawed & drained

Directions

    In a small sauce pan, saute onions & garlic in olive oil until browned.

    In large sauce pan, melt butter.

    Add flour & stir.

    Slowly add Half & Half and milk, simmer, stirring constantly till thickened.

    Add cheese & seasonings.

    Stir until cheese melts and add tomatoes, spinach and onion mixture.

    Heat through.

    Pour over warmed pasta toss and serve.
