- 1 tablespoon olive oil
- 12 cup onion, chopped
- 1 cup sweet pepper
- 1 cup monterey jack pepper cheese, shredded
- 2 cups cooked chicken
- 34 cup sour cream
- 18 teaspoon marjoram
- 18 teaspoon paprika
- 18 teaspoon thyme
Directions

1Heat oil in heavy skillet until hot, but not smoking.

2Saute onions & peppers until soft.

3Decrease heat.

4Stir in cooked chicken, sour cream, marjoram, & thyme.

5Heat a few minutes to blend, but do NOT boil.

6Season with salt & pepper to taste.

7Remove from heat.

8Add cheese & stir until melted & well combined.

9Serve with a sprinkling of paprika.
