Pepper Jelly

Ingredients

  • 3/4 c. bell peppers
  • 1/4 c. jalapeno
  • 1 1/2 c. apple cider vinegar
  • 6 1/2 c. sugar
  • 1 bottle Certo or 2 packets from 1 box
  • red or green food coloring

Directions

    Remove seeds from peppers and grind, saving the pulp and juice. (A food processor is great for grinding everything for this.) Repeat with jalapeno.

    Mix bell peppers, jalapeno, cider vinegar and sugar in a 4 x 6-quart saucepan and bring this to boil. Add Certo and bring to a boil, stirring for 1 minute.

    Let stand for a minute. Skim off foam. Add food coloring.

    Pour in jelly jars and seal. Good with cream cheese on Ritz crackers.
